These taste like little brownies. Yum.
1.5 cups chocolate chips (Enjoy Life for Dairy free)
1/3 cup coconut oil
3 T. flax meal + 1/2 cup + 1 T. water
3/4 cup coconut sugar
1.5 all-purpose Gluten free flour (I use Meister’s – already contains xantham gum)
1/4 tsp. baking powder
1.5 tsp. pure vanilla extract
Preheat oven to 350. Mix flax and water together. Set aside for 10 minutes. Melt first 2 ingredients in microwave. Mix sugar and flax together using a stand mixer. Mix flour and baking powder together. Add flour mixture, vanilla and chocolate mixture to the sugar/flax. The mixture should be stiff, not runny. Drop by tablespoons onto baking sheet covered with parchment paper. Bake for 10-14 minutes.
