Menu Plan – 2/14/16

Happy Valentine’s Day! Hunky Husband and I don’t get too excited about Valentine’s Day. However, my Little Lady wanted to have a family Valentine’s Day celebration. We even picked out special decorations one day when it was just the 2 of us, so it can be a surprise for the other 2. One evening while the other 2 were at basketball practice, we scoured Pinterest for ideas and I let her pretty much choose the menu. She’s getting so big and helping me in the kitchen so much. Bittersweet.


Sunday – Little cheeseballs with faces made with red peppers, roasted potatoes, salad (with some kind of protein), asparagus, cranberry sauce, and ice cream (So Delicious Dairy Free Cashew milk “ice cream” – so good for a treat!)

Monday – Veggie Chili

Tuesday – Spaghetti squash with basil and cauliflower alfredo

Wednesday – Homemade individual pizzas (cashew sauce for me)

Thursday – Black bean tacos

Friday – Stuffed peppers, roasted potatoes

Saturday – Crunchy cashew Thai quinoa salad – (probably with a lentils instead – my family just can’t get into quinoa – Yes, I know… Gasp!)

    1. Thanks! Yes, I do make a cashew cheese sauce. I will have to post the recipe soon! It’s easy peasy. Pretty much just raw cashews, nutritional yeast, lemon juice, garlic, water, and dijon mustard. 🙂
