Chocolate Banana Muffins

Have you ever noticed that most muffins are basically cupcakes without icing? Not these! But they were loved by my kiddos! “Mom, can I have another one?” I can say, “Sure!” Without the mom guilt. 🙂

Chocolate Banana Muffins

2 cups old fashioned oats, ground into a flour in food processor, GF if necessary

1/2 cup cocoa powder

2 tsp. baking powder

2 tsp. pure powdered stevia

2 ripe bananas, pureed

2 eggs

2 tsp. pure vanilla extract

1/4 – 1/2 cup water *

Grind oats in food processor. Mix dry ingredients together. Puree banana in food processor. Add egg and vanilla extract. You can use less vanilla extract. We just really like it. 🙂 Add water until the “right” consistency. Sorry. I told you I was a horrible recipe developer. 😉

Bake in preheated oven at 375 for 17-20 minutes or until a toothpick comes out clean. Make a double batch in case your kids are like mine and devour these babies!
